The parcels sit in Les Serres, Guigasse and La Crau, across sand, clay and the famous galets rouls, and the fruit goes into the tank as whole clusters with no destemming for a long fermentation of 30 to 45 days, then twelve months in half muids and concrete rather than new barrels.
