Manual harvest; slow, gentle whole bunch pressing. Fermentation with natural yeast in 2 4 year old barriques. Matured in tank until the Spring following the harvest. Light filtration only at bottling. The wine has tremendous personality with beguiling complexity. Notes of bitter yellow
